Tonights dinner was simple but different ...as is typical I love to put new twists on old comfort foods. I made a chicken pot pie but I used ....pan seared zucchini,squash,garlic,mushrooms,pearl onions,peas and sweet potatoes seared {with my fave seasonings and a tablespoon of basil pesto-good quality } till they showed a lil good marking then hit with a shot of sweet mirin cooking wine then added left over rotisserie chicken. I cheated and used a ready made pie crust which was okay but I should've made my own just because. I used a can of cream of chicken soup and a jar of roasted poblano pepper Alfredo sauce which blended quite nicely. Im pretty happy with the results it didnt spill out and make a mess yet wasnt dry and mucky WOOOOT !!!!!!
